Madlax has one of my all time favorite opening themes. Musically perfect, incredible lyrics.
For closing, I'd say Bleach has one of my favorites. Again, Musically wonderful.
Other series to check out based on opening and closing...
Fullmetal Alchemist has the best openings in all of anime. This is indisputable FACT.
For openings and closings of good quality the whole way through, Slayers. Megumi Hayashibara is definitely awesome.
Although there haven't been that many openings for it (for a 200 episode series, that is), I've downloaded each opening for One Piece, and 3 of the 4 are constantly being played on my playlist: We Are, Believe and Hikari e are all wonderful pieces of music.
Best Anime Closing Ever: Dragon Half. Watashi no Tamagoyaki. That song is so much fun.
Even with my limiteed viewage of Evangelion, I will say that Cruel Angels Thesis is another classic opening.
And finally, Excel SAga, for the quirky opening and adorable ending.
Green Green has an awesome opening and ending, for sure. One of the few series where I never skip the songs.

umm i think onegai teacher opening songs and episode 12 ending song is very good. Also onegai twins, ai yori aoshi, shadow skill opening, samurai champloo, samurai 7, some flcl songs, ghost in the shell complex opening, full metal panic fumuffo, some inuyasha songs, chrno crusade opening and ending songs, gundam seed (believe), angelic layer (first ending song), initial D(take me higher), chobits (let me be with u) (i hear u everywhere),fushigi yugi ending, outlaw star second ending, *phew* that all i cant think of for now but iono if u gonna like it but try them. All the Gundam Seed opening and endings were great. One Piece second opening and the endings are good. Latest ending is the best.

Slayers TV series have great openings too... all three seasons (Slayers, Slayers Next, Slayers Try).

Altho I just recently starting watching GUNDAM, I must say the music is beyond "badass." I also am very fond of the Elfen Lied opening, most Full Metal Alchemist openings/endings, and Quack Experimental Anime : Excel Saga's opening/ending just because they are totally insane, especially the ending.
