How come no one has mentioned anything about him missing?

the ref. was probably already informed about dosu's death so he didnt say anything...then again this is just my opinion

The examiner mentioned the change in the schedule, and made everyone look at it. They did t hat because they had removed Dosu from the matches due to his death. Although they never told the fighters that he had died, only that his name was removed.

Shikamaru was supposed to fight Dosu first in an extra match, then the winner of that would have fought Tenmari.

Im personally glad Dosu is gone, we'd seen about enough of him anyways, and his technique was pretty lame.

yea Dosu is dead, and thats why the judge or whatever tells them to see who they are going to match up with again.. and no he wasnt going to fight shino.. his first matchup was vs shikamaru.
