    You don't really have to check it. Adding a little acid would quickly lower the pH to measly 4.6. Aren't the Japanese anyway adding vinegar willingly to stuff?

    I once heard a crazy statistic like 1 out of every 3 japanese residents have some sort of digestive parasite in their body.

    Anyway, didn't find an article about it, but found something else interesting:
