It always made me nervous when I worked the Seafood counter when someone told me they were going to make sushi. I tried to dissuade them as much as possible, or point them to the premade boxes or sets.
I knew none of it was sushi grade, and the people who said they were going to do it didn't look remotely like they knew what they were doing. Most of them ended up getting previously frozen (but asking first for fresh) and very few, if any, actually smelled it first.
