I must have had too much cheese last night because I find myself unable to not cut the cheese. It is almost painful.

I'm particularly fond of semi-hard cow's milk cheese, specifically the Dutch Maasdammer and Gouda and Swiss Emmentaler and Gruyère. Those are all wonderful cold and they also melt great.

I would recommend trying cheeses from different regions as, outside of the EU there is no protected designation of origin laws. This means many types of regional cheese can be marketed under the same name, such examples as Feta, Parmesan, Cheddar, Gouda and others. The flavors of these can vary widely from location to location and is worthwhile to find a style you like best.

Came back from the road a while ago, stopped at juustoportti, big place where they make all kinds of cheese. Not feeling too good at the moment i might have had a bit too many cheese samples

There's a place in Cardiff called Madame Fromage...sells amazing stuff.

My favourite cheese is probably Brie, followed by Stilton. That stuff is Godlike...
