I also think that its safe to assume that because Gai doesnt use any chakra he would likley become tired at a much slower rate than itachi, he should be fast enough to dodge or defend against good deal of itachi's attacks. Itachi, kakeshi and sasuke all stated that there sharingan uses incredible amounts of chakra and all off the battles we have seen completed that used the sharingan have seen the 'sharinganer' completley exahausted after the fight, often the the point of collapse. we can only assume that Itachi would suffer the same fate especially when fighting against someone as fast as Gai.
so i think ithat out of all the ninja so far Gai would most likley be th eone to beat Itachi, who knows maybe this will be another victory for Gai over kakeshi? (bare in mind i dont read the manga, i just watch the program!)
gai can't beat itachi. and using that stadium incident to support some parts of your theory is nonsensical. kakashi was busy for a while telling sakura and co about chasing after sasuke. there goes that support.
