I've seen these .rar;.mkv;and .ogm files and wonder "what makes those different from .avi or .mp3?"

Is it just a different way of endcoding something, or are there specials mixed in with these uniques filetypes?

Ok, those are totally different files. I'll give an explanation of each one.

.rar : A rar file is is a compression file, in which 1 or more files are compressed and compacted into one file. A rar file is similar to a zip file only it is a different method of compression. To uncommpress rar files, you need a program like WinRar.

.mkv: An mkv file is a Matroska file. This is like an avi or mpeg file but it may contain several video tracks (in most cases only one), as well as several audio and subtitles tracks, in various formats with a different encoding. Mkv files are high quality and specific codecs are needed to allow playback of these files.

.ogm: An ogm file (which is a branch of an Ogg Vorbis File) is a containment file that is high quality and usually contains subtitles. People use divx or xvid to encode a video file and then contain it in an ogm container thus creating an ogm file. In an ogm file, you can usually switch between different languages (like Japanese and English) and you can toggle subtitles (turn them on and off). Ogm files have a lot of options for configuration and are usually used (in anime cases) for anime which contain english dubs and japanese subs.
