Is the anime over with the latest Naruto manga? Or are there still a lot of new chapters that are going to come out?

The manga is still released on a weekly basis, as is the anime.

Some time ago I did some calculations in here, with 1.5 manga chapters per anime episode, the anime will catch around ep240/ch350. Can't remember exactly, but around these issues.
