And why hasn't his bankai been stolen already? Oh right, this story is by Kubo. Of course nothing makes sense.

Well so far we have only seen them steal bankais when they summon them. Now that it's already summoned it probably can't be stolen.

Maybe they have a limit to the amount of power they can steal? Yamamoto's bankai may be too powerful for them to handle

His bankai share a similarity with Itchigo's. They both condense all the power of a bankai into a small sword. Few others do that. Almost everyone else's bankai manifest in something larger. Mairyu gets his giant poison thingy, Byakuya gets those big swords that scatter, failkun gets those ice flowers/wings/claws/armor. Komamura get a giant samurai and Tosen got the giant black sphere. Only 2 other then Itchigo that share the condensed and concentrated smaller form and that still remain their actual sword as the bankai is Yamamoto and Gin.

There's many possibilities why they couldn't seal/steal it. Like DB said could be the shear power of it can't be contained. We also know that zanpaktos are sentient. Maybe they need to overpower the will of the bankai and that isn't possible. Could be that since Bach has beaten/survived his bankai before he might have ordered them to not steal it so he can humiliate them by taking on the strongest bankai head on. Many possibilities pop up in my head.
